THREE BEAN SOUP MIX 
3/4 c. dried navy beans
2/3 c. dried kidney beans
2/3 c. dried pinto beans
2 tbsp. dried green split peas
2 tbsp. dried lentils
2 tbsp. beef instant bouillon
1 lb. smoked sausage or kielbasa
2 tbsp. red bell pepper flakes
1 tbsp. minced onion (instant)
1 tbsp. celery flakes
2 tsp. thyme leaves
1/2 tsp. pepper
1 (14 oz.) can stewed tomatoes

Rinse beans, combine with 8 cups of water in large soup pot. Bring to boil, cover and remove from heat, let stand 1 hour. Add seasonings and tomatoes. Bring to boil, reduce heat and simmer, covered for 2 hours. Slice sausage, add to soup. Simmer 30 minutes longer adding a small amount of water if needed. May substitute 1 pound of ham for sausage. Yields: 2 1/2 quarts.
