SCHNITZEL 
1 lb. round steak or venison steak
2 tbsp. flour
Garlic salt and pepper
2 eggs, beaten
4 tbsp. milk
2/3 c. dry bread crumbs
Cooking oil

Cut steak into serving size pieces. Place each portion between 2 pieces of plastic wrap. Pound meat with meat mallet to 1/4 to 1/8 inch thickness; cut small slits around edges to prevent curling. Coat meat with flour. Sprinkle with garlic salt and pepper.

Combine egg and milk. Dip meat into egg and milk mixture, then into bread crumbs. Cook in small amount of hot oil 3 to 5 minutes on each side until tender and brown.
