TANDOORI CHICKEN 
1 lg. chicken
2 tsp. salt
2 limes or juice of 2 limes
3 c. yogurt
2" piece ginger root
6 cloves med. garlic
3 tsp. vinegar
3 tsp. lime or lemon juice
1 tsp. salt
2 tsp. coriander powder
1 tsp. cumin powder
1 tsp. curry powder
1/2 tsp. mild chili powder or paprika

Clean and skin the chicken, cut legs, thigh, breast, back and all major parts into pieces. Make some small cuts on the meaty parts of the chicken. Salt very lightly and apply lime juice on all the pieces of the chicken, keep aside for 20 minutes for salt and lime juice to penetrate inside the meat.

Blend ginger, garlic and 1 teaspoon salt into yogurt. Add all the other ingredients and mix well. Marinate the chicken in this yogurt paste and place in refrigerator for 8 hours or preferably overnight.

Remove excess yogurt marinate off the chicken and cook on a charcoal grill or under the oven broiler to the required texture and tenderness.

Serve cooked chicken garnished with red onion pieces, hot or mild green peppers and lime wedges. This chicken is best when lime is squeezed on the meat just prior to eating.
