TANDOORI CHICKEN | |
1 medium onion 1 tsp. ground ginger 4 cloves garlic 3 tbsp. lemon juice 1 c. plain yogurt 1-2 tsp. curry powder 2 tsp. salt 2 tbsp. olive oil 1 tsp. chili powder 1/2 tsp. liquid hot pepper (Tabasco) 1/2 tsp. orange or red food coloring 4 lbs. chicken parts or 2 lbs. boneless breasts of chicken Chop onion coarsely and chop garlic. Place onion, ginger, garlic, and lemon juice in blender and puree. Add yogurt, olive oil, and seasonings. Blend until well mixed. With point of knife, slash skinless chicken all over lightly. Place in shallow dish and pour yogurt sauce over chicken, reserving some to serve with dinner. Turn chicken, cover tightly, and marinate in refrigerator overnight or for several hours. Place in baking dish and bake at 400 degrees for 40 minutes, turning once. Broil for 1 or 2 minutes to brown. |
