CHILI WITH A KICK 
1 med. minced onion
2 sm. cloves of minced garlic
1 1/2 tbsp. Southern Comfort
1/2 can beer
2 lbs. ground sirloin
Pinch of salt
Pinch of sweet basil
1 tsp. brown sugar
Pinch of oregano
1/2 tsp. black pepper
1/2 tsp. red pepper, ground
3/4 c. chili powder
1 (6 oz.) can tomato sauce
1 (6 oz.) can tomato paste
1 lg. can stewed tomatoes
1 tbsp. Cajun seasoning
1 c. hot chunky salsa

Saute onions and garlic until tender add ground beef, brown then add salt, and black pepper. Add chili powder, stir in beer, tomato paste and sauce. Cook on medium heat for 10 minutes. After, add sweet basil, oregano and brown sugar. Stirring constantly, add stewed tomatoes, salsa, red pepper and Cajun spice. Cook for 30 minutes more on low heat. Just before serving (5 minutes) add whiskey. Serve with bread crumbs to thicken at table.
