CHICKEN SALAD 
1 pkg. chicken flavor rice mix
2 c. chopped cooked chicken breast
1/2 c. diced celery
1/3 c. raisins, plumped in hot water
1/4 c. minced red onion
1 c. mayonnaise
2 tbsp. cider vinegar
1 tbsp. prepared horseradish
1/3 c. toasted sliced almonds

Prepare rice mix according to package directions; chill. Toss chilled rice with chicken, celery, raisins, and onion. Combine mayonnaise with vinegar and horseradish; stir into chicken-rice mixture. Arrange salad on lettuce leaves and garnish with almonds. Serves 6 to 8.
