OZARK PUDDING 
2 eggs
1 c. sugar
1 tsp. vanilla
1/3 c. all-purpose flour
1 tbsp. baking powder
1/8 tsp. salt
2 c. chopped, peeled apple
1/2 c. chopped walnuts
Unsweetened whipped cream
Poached apple slices (optional)

In large mixer bowl beat together the eggs, sugar and vanilla until light and fluffy. Stir together the flour, baking powder and salt. Blend into cream mixture. Fold in apple and walnuts. Turn into a greased and floured 9x9x2 inch baking pan. Bake in a 325 degree oven for 30 to 35 minutes. Spoon into dessert dishes. Serve warm with whipped cream and apple slices, if desired. Makes 6 to 8 servings.
