CHEESE-STUFFED MUSHROOMS 
2 lbs. lg. mushrooms
1/2 c. grated Parmesan cheese
3/4 c. fine dry bread crumbs
1/2 c. grated onion
2 cloves garlic, minced
3 tbsp. minced parsley
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. oregano
3/4 c. olive oil

Buy large, even-sized mushrooms and wash gently. Remove stems and chop. Mix stems with cheese, bread crumbs, onion, garlic, parsley, salt, pepper and oregano. Stuff mushroom caps with mixture. Pour a little oil into a baking pan and arrange mushrooms in it. Pour remaining oil over them, being sure to get a little oil on each mushroom. Bake at 350 degrees for 25 to 30 minutes. Serve as antipasto, vegetable, or appetizer. Serves 6 to 8. May substitute melted butter for oil.
