CHOCOLATE - COVERED CHERRY
COOKIES
 
1 1/2 c. all-purpose flour
1/2 c. unsweet cocoa
1/4 tsp. salt
1/4 tsp. baking powder
1/4 tsp. baking soda
1 (10 oz.) jar maraschino cherries (about 48)
1/2 c. butter
1 c. sugar
1 egg
1 1/2 tsp. vanilla
1 (6 oz.) pkg. (1 c.) semi-sweet chocolate chips
1/2 c. sweetened condensed milk

Drain cherries, reserving juice; set aside. Combine flour, cocoa, salt, baking powder and soda; set aside. In large bowl beat butter, add sugar and beat until fluffy. Add egg and vanilla; beat well. Gradually add dry ingredients.

Shape dough into 1 inch balls. Place 2 inches apart on ungreased cookie sheet. Press down center with thumb. Place a drained cherry in center of each cookie.

For Frosting: Combine chocolate chips and condensed milk. Cook over low heat until chocolate is melted. Stir in 4 teaspoons cherry juice. Spoon over cookie. Bake at 350 degrees for 10 minutes or until edges are firm. Frosting can be thinned with additional juice.
