CHILI-CHEDDAR CORN MUFFINS 
1 c. flour
1 c. cornmeal
3 tbsp. sugar
1 tbsp. baking powder
1/4 tsp. salt
2 tbsp. chili powder
1 egg, beaten
2 tbsp. butter, melted
1 c. milk
1 1/2 c. shredded Cheddar cheese

Preheat oven to 375 degrees. Butter top and insides of 12 muffin pan cups.

In a medium bowl, combine flour, cornmeal, sugar, baking powder and chili powder. Mix well. Add 1 cup Cheddar cheese. Toss lightly. Combine egg, milk and butter. Stir into dry ingredients just until moistened. Spoon into prepared cups. Top with remaining 1/2 cup Cheddar cheese.

Bake 20 minutes. Keep best when frozen.
