ITALIAN CASSEROLE 
1 lb. sausage
1/2 c. chopped green pepper
2 c. chopped celery
1/2 c. sliced onions
1 (6 oz.) can mushrooms, undrained
2 1/2 c. water
1 pkg. chicken noodle soup mix
1 c. rice, uncooked

Remove sausage from casing. In large frying pan, brown sausage. Add celery, green peppers and onion. Cook 3 minutes. Add mushrooms, water and soup. Bring to boil and stir in rice. Cover and simmer 10 minutes. Pour into a 2 quart casserole. Bake at 325 degrees for 45 minutes.

NOTE: This can be prepared and put into the refrigerator overnight to bake the next day, however, if you do this add 1/2 cup water and cover with foil before baking.
