ITALIAN SEAFOOD GRATIN 
2 tbsp. butter
2 c. sliced fresh mushrooms
1 c. sliced green onions
1 tsp. minced garlic
1 packet white sauce mix (1 c. yield)
1 c. milk
12 oz. imitation crabmeat, thawed
1 c. grated Parmesan cheese
1/4 tsp. pepper

Grease four 1 to 1 1/2 cup boilerproof baking dishes or a 1 1/2 quart dish. Melt butter in a large skillet over high heat. Add mushrooms, green onions and garlic. Cook, stirring occasionally, 2 to 3 minutes, until softened. Reduce heat to medium stir in dry sauce mix.

Add milk and stir until boiling. Add crabmeat; cook 1 to 2 minutes, breaking up any large chunks, until heated through. Stir in 3/4 cup of the Parmesan and the pepper until blended. Spoon crabmeat mixture into prepared baking dishes or dish; sprinkle with remaining Parmesan. Broil 1 minute until top is golden brown. Makes 4 servings.
