ITALIAN MEAT LOAF 
2 slices rye bread
2 slices white bread
1 lb. ground beef
1 med. onion, finely chopped
3 sprigs parsley, chopped
3 tbsp. grated Parmesan cheese
1 egg, beaten
1 tsp. salt
1/4 tsp. pepper
2 tbsp. butter
1 can tomato sauce (8 oz.)
1 tsp. oregano

Put both kinds of bread in a large mixing bowl. Pour 1 cup of water over bread and let slices soak for several minutes, then mash bread very finely with a fork. Add meat to bread and add finely chopped onion, parsley, grated cheese, slightly beaten egg, salt and pepper. Mix together with hands.

Put mixture in baking pan and shape into loaf. Put dots of butter over top and bake 30 minutes. Pour tomato sauce over meat and sprinkle with oregano and continue baking 20 minutes longer. Oven 375 degrees.
