JALAPENO CORNBREAD 
2 pkgs. yellow cornbread mix
1 jalapeno pepper, chopped
1 can cream style corn
1 c. grated Cheddar cheese
1 onion, chopped
2 eggs
1 sm. jar pimento

Add just enough buttermilk to mix to cornbread consistency.

Bake until light brown on top. Makes 2 pans cornbread. Very moist.
