JALAPENO CORNBREAD 
3 c. cornbread mix
1/4 c. Crisco oil
1 lg. grated onion
1 c. cream style corn
1/2 c. chopped jalapeno (fine chopped)
2 1/2 c. milk
3 beaten eggs
1 1/2 c. grated cheese
2 tbsp. sugar

Put cornbread mix in large bowl. Add milk and stir. Add other ingredients in order given. Bake in three greased 8"x8"x2" pans or 13"x9"x2" pan at 375 degrees or 400 degrees about 35 minutes or until done.

This freezes well and is excellent served with vegetables or as base for chili or chicken ala king.
