OKRA GUMBO 
2 tbsp. butter
1 onion, chopped fine
2 stalks celery, chopped fine
4 c. chicken broth
1/2 green pepper, chopped fine
2 c. sliced okra
2 cloves garlic, minced
1 1/2 c. canned tomatoes with juice
Salt
Pinch of cayenne pepper or a taste
1 c. diced raw chicken meat
1 c. cooked rice
1 tbsp. gumbo file

Melt the butter in a large soup pot. Add the onion, celery and cook, stirring for about 5 minutes until golden. Stir in the broth, green pepper, okra, garlic and tomatoes. Bring to a boil, then simmer for about 30 minutes. Add salt to taste, the cayenne pepper, chicken meat and rice and cook for 10 more minutes. Add gumbo file, simmer 2 minutes.
