OVEN BEEF STEW 
1/3 c. flour
1 tsp. salt
1/4 tsp. pepper
2 lb. beef cubes
1/3 c. oil
16 oz. can whole tomatoes
10 oz. pkg. frozen peas
10 oz. carrots, frozen, diced
4 oz. can mushrooms, drained
10 sm. pearl onions or diced onion
3 c. hot mashed potatoes
1/2 lb. Velveeta cheese, cubed

Combine flour and seasonings. Coat meat, brown in oil, drain. Combine meat, tomatoes, peas, carrots, onions, mushrooms. Pour into 2-quart casserole dish. Bake 1 hour and 45 minutes or until meat and onions are tender.

Combine potatoes and cheese. Spoon around edge of casserole. Broil until cheese spreads and melts. 6 to 8 servings.

1 (16 oz.) can small whole onions, drained, can be substituted for fresh.
