CHICKEN CACCIATORE 
2 whole boneless chicken breasts, cut into sm. pieces
1/2 c. flour
Salt & ground pepper to taste
Olive oil
2 cloves garlic, chopped
2 bell peppers, chopped (lg. pieces)
2 med. onions, chopped (lg. pieces)
6-7 lg. mushrooms, sliced
2 cans stewed tomatoes (15 oz.) or 1 can crushed tomatoes (28 oz.)
1 tbsp. basil
1 tsp. oregano

Mix flour with salt and pepper in large plastic bag, coat chicken. Saute garlic in olive oil. Add chicken and cook until all white. Add remaining ingredients. Simmer 20 minutes. Serve with pasta or minute rice.
