PEACH MUFFINS 
1/2 c. butter
3/4 c. sugar
1 egg, at room temperature
1 1/2 c. flour
1 1/2 tsp. baking powder
1 tsp. vanilla
1/2 c. yogurt or sour cream
1 c. chopped peaches
Chopped pecans

Cream butter and sugar; add egg and beat well. Mix in vanilla and yogurt and then add flour and baking powder. Fold in peaches and pecans. Stir just until blended. Bake at 375 degrees for 20 minutes or until done.
