PEACH COFFEE CAKE 
2 c. flour
4 tsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
2 tbsp. butter
1/2 c. milk
1 egg, slightly beaten
4 to 6 peaches
2 tbsp. light brown sugar

Sift together first 4 ingredients. Blend in shortening, add milk and egg. Slice peaches and set aside (4 to 6 peaches). Knead pastry on board rolling to fit 8 or 9 inch pan, greased and floured. Allow pastry to form a rim around pan. Place sliced peaches in rows, sprinkle with light brown sugar and cinnamon, dot with butter and bake at 350 degrees for 25 minutes.
