SICILIAN MEATLOAF | |
2 lbs. ground beef 2 eggs 3/4 c. soft bread crumbs 1/2 c. tomato sauce 1 sm. clove garlic, minced 2 tbsp. chopped parsley 1/2 tsp. dried oregano 1/4 tsp. pepper Salt to taste 8 slices ham 3 slices Mozzarella cheese 6 oz. shredded Mozzarella Combine eggs, bread crumbs, tomato sauce, parsley, oregano, salt, pepper and garlic with ground beef. Preheat oven to 350 degrees. On foil or waxed paper, pack mixture into a 12 x 10 inch rectangle. Arrange ham slices on top of meat, leaving a small margin around edges. Sprinkle Mozzarella over ham. Roll up meat (jelly roll style), using paper to seal edges. Bake 1 hour and 15 minutes. Five minutes before ready, place Mozzarella slices on top. |
