BLUEBERRY COFFEE CAKE 
2 c. flour
1 c. sugar
3 tsp. baking powder
1 tsp. salt
1 egg
1/3 c. butter, softened
1 c. milk
2 c. blueberries

Preheat oven to 350 degrees. Grease pan 11 x 7 inches. Beat all ingredients on low for 30 seconds. Beat on medium 2 minutes. Spread half of the batter in the pan, add 1 cup blueberries. Spread the remaining blueberries on the second layer of batter. Bake for 35 to 40 minutes. Drizzle with icing while still warm.

ICING:

1 c. powdered sugar
1 tsp. grated lemon rind
2 tbsp. lemon juice

Blend.
