JOHN'S CALAVACITAS 
5 ears corn, cut off cob
15 med./sm. yellow squash, sliced
1 clove garlic, crushed
2 med. onions, chopped
Fresh green chilies, chopped and seeded to taste
1/4 c. vegetable oil
American cheese, cheddar cheese (or combination)

Heat wok (or skillet) with oil. Cook onion until clear, then add corn, squash, garlic and chilies; saute. Cover and simmer. This will make a lot of juice. Uncover and let the juice reduce to almost none. Cut cheese into chunks and add. Turn fire to low, and let cheese melt. Serve! This is great with steaks as a substitute for a potato.
