BAKED SALMON: Place steaks in shallow buttered baking pan; brush steaks with oil and lemon juice; sprinkle with salt, pepper and dill, parsley or fennel (optional). Bake in 350 degree oven until fish flakes easily with fork (30 to 40 minutes). POACHED SALMON: Arrange steaks in skillet, add boiling salted water but not to cover steaks. Place cover slightly to side, to preserve color. Simmer until fish flakes easily with fork (5 to 8 minutes). Serve hot or cold with Bearnaise, Hollandaise, dill or tartar sauce. Garnish with watercress and lemon wedges. |
