1 1/2 pts. strawberries
10 oz. spinach, cleaned & dried, stems removed
3 tbsp. lemon juice
1/4 c. sugar
1 c. Egg Beaters
6 tbsp. vegetable oil

Beat together lemon juice, sugar, Egg Beaters and oil (may be made the night before). Pour dressing on strawberries and spinach up to 3 hours ahead of serving.
