COTTAGE CHEESE TART 
GRAHAM CRACKER PASTRY SHELL:

16 graham crackers
1/2 c. sugar
1/8 tsp. salt
1 tsp. cinnamon
1/2 c. soft butter

Break graham crackers into glass container. Osterize to fine crumbs. Add sugar, salt and cinnamon. Cover container and Osterize until well blended. Add butter and Osterize a few seconds until thoroughly blended, stopping and starting motor as needed to scrape ingredients from sides of container with a rubber spatula.

Press crumbs firmly into a 9-inch pie plate. Chill in refrigerator while preparing filling.

CHEESE FILLING:

1/2 c. light cream
2 eggs
2 c. cottage cheese
2 tbsp. lemon juice
1 tsp. vanilla
2/3 c. sugar
1/4 tsp. salt
3 tbsp. flour

Place all ingredients in glass container. Cover and Osterize until well blended, stopping and starting motor several times to scrape mixture from sides of container with a rubber spatula. Pour into pastry shell and bake at 325 degrees (slow oven) for 60 minutes or until firm. Cool thoroughly before serving.

NOTE: May use evaporated milk instead of cream.
