SPICY PEANUT AND SCALLION PILAF 
2 garlic cloves, minced
1/4 tsp. dried hot red pepper flakes
2 tsp. olive oil
1 c. rice
2 c. water
1/4 c. salted roasted peanuts, chopped
Scallions, 1 bunch, chopped
2 tsp. fresh lime juice

In a heavy saucepan, cook the garlic and the red pepper flakes in the oil over moderately low heat for one minute. Add the rice and cook the mixture over moderate heat, stirring, for 1 minute.

Stir in 2 cups water, bring the liquid to a boil and cook the rice, covered, over low heat. (Cook the rice according to directions on its package.) Let it stand, covered, off the heat for 5 minutes. Stir in the peanuts, scallions and lime juice. Serves 4-6.
