VEGETABLE CASSEROLE 
4 oz. Muenster cheese, shredded
3/4 c. plain lowfat yogurt
1 tsp. Dijon mustard
Dash freshly ground pepper
1 pkg. frozen broccoli, cauliflower, carrot mix
1/4 c. chopped scallions (green onions)

Cook or microwave vegetable mix leaving crisp.

In a small bowl combine cheese, yogurt, mustard and pepper. Arrange cooked vegetables in a shallow flameproof casserole. Sprinkle with scallions and top with yogurt mixture.

Broil until cheese is melted and begins to brown, about 7 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
