STRACIATELLA SOUP 
3 eggs
3 tbsp. freshly grated Parmesan or Romano cheese
2 tbsp. parsley, minced
6 c. chicken broth

Beat eggs until frothy. Stir in cheese and parsley into eggs. Bring broth to rolling boil and pour egg mixture into it, stirring constantly until egg mixture is set. Makes about 6 servings.
