SHRIMP DELIGHT 
3/4 c. butter
1 medium onion, chopped
1 medium bell pepper, chopped
1 can Rotel tomatoes
1 can onion soup
1 can cream of chicken soup
1 c. raw rice
1 1/2 - 2 lbs. shrimp
4 sprigs parsley
Salt and pepper to taste

Melt butter in casserole; chop onions and pepper and blend with other ingredients. Bake 1 hour at 350 degrees.

Note: Bake 30 minutes, uncovered. Stir, then cover and bake the remaining 30 minutes.
