EASY FILLED COOKIES 
1 c. soft shortening
2 c. packed brown sugar
3 eggs
1/2 c. water
1 tsp. vanilla
4 c. flour
1/2 tsp. salt
1 tsp. baking soda
1/4 tsp. cinnamon

Mix thoroughly shortening, sugar and eggs. Stir in water and vanilla. Sift dry ingredients together. Add. Drop 1 teaspoon dough on ungreased baking sheet. Place 1/2 teaspoon filling on top, then cover with more dough. Keep cookies 2" apart.

Bake at 375 degrees for 10 to 12 minutes. Yield: 5 to 6 dozen.

When using dates, reduce sugar.

FILLING:

2 c. raisins
1/2 c. sugar
1 c. water

Cook together slowly until thickened. Add vanilla and nuts if desired. Thicken with 1 tablespoon cornstarch.
