VEGETABLES - BEEF CASSEROLE 
1 lb. lean ground beef
4 med. Irish potatoes - cut in chunks
1 med. onion - sliced
4 carrots, sliced thin
1 stalk celery (optional)
2 c. chopped cabbage
1 can condensed tomato soup
3/4 c. water

In large casserole, alternate layers of RAW ground beef, RAW cabbage, potatoes, carrots, onion, sprinkling each with salt and pepper. Dilute soup with 3/4 cup water. Pour over top layer of casserole. Cover with foil. Bake at 400 degrees for 1 1/2 hours. Check after 1 hour for doneness.
