EGGNOG QUICK BREAD 
2 eggs
1 c. sugar
1 c. dairy eggnog
1/2 c. butter, melted
2 tsp. rum extract
1 tsp. vanilla
2 1/4 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg

Heat oven to 350 degrees. Grease bottom only of 9 x 5 inch loaf pan. Beat eggs in large bowl. Add sugar, eggnog, butter, rum extract and vanilla; blend well. Lightly spoon flour into measuring cup level off. Add flour, baking powder, salt and nutmeg, stirring just until dry ingredients are moistened.

Pour into greased pan. Bake 45-50 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely.
