MY FAVORITE BAKED POTATOES 
4 baked potatoes
1 c. grated raw carrots
1/4 c. soft butter
1/4 c. chopped parsley
1/4 c. onions (finely chopped) or chives
1/2 tsp. horseradish
1/2 c. plain yogurt or sour cream
Grated cheese
Salt & pepper to taste
Paprika

Cut baked potatoes in half and remove pulp. Mix potato pulp, carrots, parsley, onions or chives, horseradish, yogurt or sour cream and butter. Season to taste with salt and pepper. Top with cheese and paprika. Bake in 350 degree oven approximately 15 minutes or until cheese melts.
