YAM BANANA PUDDING 
1 c. mashed ripe bananas
2 c. cooked, peeled and mashed sweet potatoes or 1 (18 oz.) can
1/2 c. milk
1/2 c. sour cream
1/2 c. orange juice
1/3 c. light brown sugar
1/4 c. butter, melted
1 tbsp. grated orange rind
1/2 tsp. pumpkin spice
1/4 tsp. salt
4 eggs, separated

Preheat oven to 350 degrees. Combine all ingredients except egg whites, in a large bowl.

In a separate bowl, beat egg whites until stiff; fold them into banana mixture. Pour mixture into a greased 2-quart baking dish and bake for 1 hour and 15 minutes or until brown. Serve hot or cold, with whipped cream or topping, if desired. 6 to 8 servings.
