GRANDMA'S POTATO SALAD 
10 lbs. potatoes, boiled, peeled & shredded
1 doz. hard-cooked eggs
1 onion, chopped
2 c. diced celery

DRESSING:

3/4 c. vinegar
1/4 c. water
1/2 c. sugar
2 eggs
2 tbsp. additional water
1/4 tsp. dry mustard
1 tbsp. salt
1 tbsp. flour
1/2 c. cream
1 qt. mayonnaise

DRESSING: Heat 1/4 cup water, vinegar and sugar in double boiler to boiling point. In separate bowl, beat eggs and combine with 2 tablespoons water, mustard, salt and flour, mixing well. Gradually add flour mixture to vinegar mixture -- blending well. Remove top from double boiler; add cream and mayonnaise, blending well.

FOR SALAD: In large bowl, mix potatoes, eggs, onion and celery; combine with dressing. Yield: 50 servings.
