GRANDMA'S HOT POTATO SALAD | |
8 slices bacon drippings or 1/3 to 1/2 c. vegetable oil 1/2 c.flour 2 to 3 c. water 3/4 c. sugar 2 tsp. salt 1/3 to 2 tbsp. vinegar 1 c. minced onions 1 c. cut up celery 8 potatoes, cooked and cut up Heat skillet and cook bacon, reserve drippings. Measure 1/3 to 1/2 cup drippings and lace in saucepan. Heat and add flour; mix in water and slowly heat to thick sauce. Add sugar, salt and vinegar and stir until smooth. Add onions and celery and cook over low heat about 10 minutes. Pour over cooked potatoes and sprinkle with crumbled bacon. Put in medium (350 degree) oven for 20 minutes. NOTE: Replace bacon drippings with vegetable oil and use bacon bits to reduce fat. |
