COCONUT POUND CAKE 
2 sticks butter (1 c.)
1/2 c. peanut oil or Wesson oil
3 c. sugar
3 c. flour
1 tsp. baking powder
5 eggs
1 c. sweet milk
2 tsp. coconut flavoring
1 c. Angel Flake coconut (3 1/2 oz. can)

Cream butter, oil and add sugar and beat. Add one egg at a time and beat. Add milk and flour a little at a time. Add flavoring. Fold in coconut (sprinkle a little at a time) and do not beat. Use a 10 inch tube pan. Bake for 1 1/2 to 2 hours at 300.
