HAM & POTATO CASSEROLE 
2 tbsp. butter
2 tbsp. flour
2 tsp. salt
1/2 tsp. pepper
2 c. milk
4-6 c. thinly sliced potatoes
1/4 c. minced onion
1/2 c. ham, cut into sm. pieces

Melt butter in saucepan. Stir in flour, salt and pepper. Add milk, slowly, stirring constantly until sauce boils and thickens. Add sliced potatoes and heat with occasional stirring until sauce boils again. Add onions and ham; mix well.

Place in lightly buttered casserole dish. Dot with butter. Bake 40-50 minutes at 350 degrees until potatoes are tender and top is lightly browned.
