STATION ONES 4 ALARM FIRE HOUSE
CHILI
 
2 lbs. Webber (hot) sausage
1 Lg. onion
4 clove garlic, minced
2 tbsp. cooking oil
2 (15 oz.) cans hot chili beans
2 (15 oz.) cans tomato sauce
1 (28 oz.) can whole tomatoes, drained and crushed
1 cup beer or beef broth
2 tbsp. chili powder
1/4 c. chopped jalapenos
1 tsp. cinnamon
Shredded cheddar cheese
Sour cream
Green onions

In Dutch oven, cook crumbled sausage, onion and garlic in hot oil until sausage is no longer pink, drain.

Add remaining ingredients except cheddar cheese, sour cream and green onions.

Simmer, uncovered, for 45 minutes. To serve, top each bowl of chili with cheese, a dab of sour cream, and green onions.

Makes 6 servings, may be double, tripled, or just as much as you need.
