SHORTBREAD 
1 c. butter
2 c. flour, sifted
3 tbsp. icing sugar
3 tbsp. rice flour

Beat butter until very creamy. Add flour, work in well, gradually. Add mixed sugar and rice flour. Turn onto board or counter and knead very well. Roll out to 1/2 inch thickness and cut to shape. Bake at 275 degrees until faintly brown.
