TURKEY ITALIAN SAUSAGE 
1 lb. raw ground turkey
1/2 tsp. black pepper
1/2 tsp. salt
2 tsp. dried Italian herbs (oregano, thyme, rosemary, savory, sage, and basil)
Dash cayenne pepper
2 shallots, finely chopped
4 tbsp. fresh parsley, chopped
1 tbsp. butter

Saute the shallots and parsley in the butter. Add all ingredients together. It's easier to blend with your hands. Put in a plastic bag or cover and let sit for 1 day in refrigerator. It makes a great dish of sausage and gravy. It also freezes well. Also good in spaghetti.
