EGG AND CHIP CASSEROLE 
6 hard cooked eggs, coarsely chopped
1 1/2 c. diced celery
3/4 c. coarsely chopped walnuts
2 tbsp. minced green pepper
1 tsp. minced onion
1/2 tsp. salt
1/4 tsp. pepper
2/3 c. mayonnaise
1 c. grated cheddar cheese
1 c. crushed potato chips

Combine eggs, celery, walnuts, green pepper, onion, salt, pepper and mayonnaise or salad dressing. Toss lightly but mix thoroughly.

Place in a greased 1 1/2-quart baking dish. Sprinkle with cheese and top with potato chips. Bake at 375 degrees for 25 minutes or until thoroughly heated. Makes 6 servings.
