2 c. cauliflower flowerettes 2 c. broccoli flowerettes 1 sm. sweet red pepper or green pepper 1 clove garlic, minced 2 tbsp. butter 1/4 c. grated Parmesan cheese 1/2 tsp. Dijon mustard Cook cauliflower and broccoli flowerettes in 2 inches boiling salted water 8 to 10 minutes or until just tender. Meanwhile, cut red or green pepper in strips. Cook pepper and garlic in butter, stirring occasionally until tender. Stir in cheese and mustard. Drain cauliflower mixture and place in serving bowl. Add pepper mixture. Toss to coat the vegetables. Makes 8 servings. |
