BAKED INDIAN PUDDING | |
1 qt. milk 5 tbsp. yellow cornmeal 2 tbsp. butter 1/2 c. brown or white sugar 1/2 c. dark molasses 2 eggs, well beaten 1 tsp. salt 1/2 tsp. cinnamon 1/2 tsp. ginger 1/2 tsp. nutmeg 1/2 tsp. mace 1 c. light cream Bring milk slowly to a boil in double boiler, slowly add 5 tablespoons cornmeal, keep stirring. Cook 20 minutes, stirring occasionally. Add 2 tablespoons butter, 1/2 cup sugar and 1/2 cup molasses. Remove from heat, add spices. Blend in 2 well beaten eggs. Pour into buttered baking dish. Bake uncovered 300 degrees for 2 to 2 1/2 hours. Stir occasionally first hour, then carefully pour 1 cup cold cream over top and finish baking without stirring. Serve warm with cream or vanilla ice cream. Serves 8-10. |
