OATMEAL-RAISIN COOKIES 
1 stick butter
1 egg
1 tsp. vanilla
1/2 c. sugar
1 c. brown sugar, packed
1 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
2 c. quick cooking oats
1/4 c. raisins

Mix butter, egg and vanilla in a large bowl. Add sugar and beat well. Sift flour, baking soda and salt together. Gradually add flour mixture to sugar mixture. Mix well. Stir in oats and raisins with a wooden spoon. Drop dough by teaspoons onto cookie sheet about 2 inches apart. Bake at 350 degrees for 10-12 minutes or until lightly browned. Let cool on wire racks.
