DATE ZUCCHINI BREAD | |
3 eggs 1 1/2 c. sugar 1 c. salad oil 1 tbsp. vanilla 3 c. flour 1 tsp. salt 1 tsp. baking soda 1/4 tsp. baking powder 1 1/2 tsp. cinnamon 2 tsp. cinnamon 2 c. grated zucchini 1 1/2 c. chopped dates Beat eggs, sugar, oil and vanilla in large bowl. Add all dry ingredients, then grated orange rind. Fold in dates and zucchini. Bake at 325 degrees in greased pans for about 60 minutes. Cool in pans for 10 minutes, turn out of pans and cool on racks. |
