ZUCCHINI SWEET BREAD 
3 eggs
1 c. salad oil
1 tsp. salt
1 tsp. baking soda
3 c. whole wheat or plain flour
2 c. sugar
2 c. washed grated zucchini
2 tsp. baking powder
1 tsp. cinnamon
1/2 c. chopped raisins or dates, can use chopped prunes or any chopped fruit (opt.)
1 1/2 c. chopped walnuts
1 tsp. brown sugar

Beat eggs until light and fluffy. Add sugar, salad oil, beat well and stir in zucchini. Combine remaining ingredients and stir into zucchini mixture. Pour into 2 loaf pans, I use Pam to grease with. Bake at 350 degrees for 1 hour. Let cool 15 minutes before removing from pan.
