ZUCCHINI BREAD | |
3 eggs 1 c. oil 2 c. sugar 2 c. zucchini squash, peeled and grated 3 tsp. vanilla 2 tbsp. orange rind 1/2 c. chopped nuts 3 c. flour 1 tsp. baking soda 1/4 tsp. baking powder 2 tsp. cinnamon Stir together beaten eggs, oil, sugar and zucchini. Sift together flour, baking powder, salt, cinnamon and baking soda. Add to zucchini mixture. Stir in vanilla, orange rind, and nuts. Pour into greased loaf pans. Bake at 325°F for one hour. Makes 2 loaves. |
