CANDIED SWEET POTATOES 
8 med. size sweet potatoes
1 1/3 c. firmly packed brown sugar
2/3 c. water
1/4 c. sugar
1/3 c. butter, melted
1/2 tsp. molasses
1/4 tsp. salt
1/4 tsp. ground ginger
Dash of pepper

Cook potatoes in boiling water until tender. Drain, peel, and cut potatoes in half lengthwise. Place cut side up in a greased shallow baking pan. Set aside.

Combine remaining ingredients in a saucepan; bring to a boil. Boil 6 minutes, stirring frequently. Pour over potatoes; bake at 375 degrees for 30 minutes, basting frequently. Makes 8 servings.
